Dan Madura Farms
Dan is currently the only cultivator of gourmet mushrooms in Orange County and has increased production to at least ten different varieties. He started growing mushrooms in 1977 and was named the first mushroom grower in Orange County as featured in the Times Herald Record. It is not only the great taste of the different mushrooms that concerns him, but their medicinal value as well.
Though not a certified organic farm, Dan is serious about practicing organic farming principles and is always considering new products and methods for the communities he serves.

Chocolate Cherry Rolls
Chunks of fair trade chocolate, tart dried cherries, and natural levain for a slightly sweet, rich taste. We suggest serving warmed with gelato or crème anglaise, pairing with a soft cheese for breakfast, or baking into a decadent bread pudding.
Mexican Conchas (Vanilla or Chocolate Topping)

A long fermentation gives this bread it’s rich, three-dimensional flavor & moist texture. Made with local eggs & honey.
Flakey, buttery flatbread made w/ semolina. Often compared to Paratha, can be served with either sweet or savory dishes. In Morocco, M’smen is traditionally eaten for breakfast with honey. It can also be prepared as a savory treat with caramelized onions and parsley or spiced ground lamb folded between the thin layers of dough.

Armenian Lavash Crackers
Lavash is baked and eaten in Armenia and Iran. Traditionally, it is rolled thin and served soft. Hot Bread Kitchen’s lavash is baked on sheets to create a crispy cracker and topped with a variety of seeds and spices. It has been praised in New York Magazine, which dubbed it the ‘socially conscious cracker’. Look for the whole wheat-sesame version, featuring organic whole wheat flour grown and milled in NY State! A perfect accompaniment to cheeses, hummus, dips, and tapenades.
