In honor of those who have sacrificed in service, we will donate to The VFW Ladies Auxiliary Piermont by matching 15% of sales from Veteran Matt Soldano of Southtown Farms  (pastured & grass-fed meats)veteran certified by the Homegrown by Heroes label.

The VFW Ladies Auxiliary Piermont has been helping veterans for decades. They are dedicated to improving the lives of veterans, active-duty military and their families. Their programs are designed to bring needed services, information and assistance to these target groups in our area.

   Unexpected savory & sweet jams from vegetables and fruit herb combinations that are great with cheese, cured meats and pâté.  Plus tomato sauces, salad dressings and other condiments.  All from their Torino, Italy originated family recipes.
 

Asian Farmer Dumplings:  Made-from-scratch dumplings using local ingredients. Chicken, pork and vegetable choices.

Carrot Top Kitchens:  A specialty food company based in Redding, CT that sources locally and sustainably. Their products are handcrafted, all natural, non GMO and “made with love”.  Award winning pickles, several varieties of hummus, soups (like gazpacho and borscht), tapenades & compound butters are among the offerings you can expect.

The Cheese Guy:  Kosher, natural, artisanal cheeses from family owned dairy farms, selected by cheese monger Brent Delman. 

Dan Madura Farms:  Home grown produce from the black dirt region of NY including a large variety of exotic mushrooms: Maitake (hen of the woods), Shiitake, Yellow & Grey Oyster, King Oyster, Pioppini, Lion’s Mane, Beech, Crimini & Portobello’s.

Deep Roots Farm: Located in Hudson NY on 12 acres, their mission is to provide local communities with access to high-quality, nutritious fruits and vegetables through means of organic and sustainable crop production. The farm adheres to all NOFA-NY organic standards and is in transition to becoming certified organic. They also make great specialty products such as pickles, hot sauces, salsas, pestos, and kimchi.

Red Owl Academy, a new preschool in Sparkill, will offer kids a chance to make an awesome Mother’s Day gift. Children of all ages can plant butterfly friendly flowers to give to Mom and learn about how to turn your backyard into a friendly place for pollinators. All materials provided. Free.

SUMMER SEASON STARTS APRIL 30TH

“THE SOUK” FARM MARKET & ARTISAN BAZAAR RETURNS FOR FIRST SUMMER SEASON

Sundays April 30th through November 19th from 9:30am to 3:00pm  at The OUTSIDE IN.

Dear Loyal Customers,

We are very pleased to be back and continuing “The SOUK” into the warm weather months for the very first time. You can expect a diverse vendor lineup including traditional provisions alongside a wide variety of prepared ready-to-eat-now and packaged/frozen take-home items with organic, vegan and gluten-free choices. We heard your feedback from our recent survey and in response we will have fresh fish and much more produce.

We welcome you to eat brunch in our shady bamboo grove, stroll through the indoor gallery spaces and sculpture garden or pick up provisions to prepare meals at home. Earlybirds who arrive between 9:30 and 10:00 get first peck at produce, the freshest fish and a free cup of Irving Farm coffee.

Several new vendors will be joining us this season, including one of Piermont’s long time favorites and most commonly requested vendor, Bodhitree Farm.  Run by the lovely Nevia No, her family run farm located in the New Jersey Pinelands is well known for their 100-plus uncommon and heirloom varieties of vegetables and herbs. Other notable additions include The Fish Dock (featuring wild fresh fish from the pristine waters of Iceland), Coyote Kitchen (seasonal jams & marmalades), Freakin’ Vegan (vegan take-home dinners), Let Them Eat Pita (vegetarian/middle eastern foods), Pine Island Brewery (craft beer), Southtown Farms (pasture raised chicken, pork & lamb plus grass-fed black angus beef) and True Food (organic, prepared healthy foods).

Week XI: Dan Madura Farm & Black Dirt

“I farm to feed people.”, Dan Madura

Vendor Spotlight: Dan Madura Farm

Dan Madura Farm is located in the 22 square miles of Orange County N.Y. known as the “Black Dirt” region, a unique valley of deep and richly organic soil formed from the decay of plants in the remains of a great shallow swamp that resulted from the glaciers melting away 20,000 years ago. In summertime satellite photographs, the “Black Dirt” region is a visible smear of blacks and browns at the bottom edge of the emerald-green Catskills. This is home to some of North America’s most fertile soil, the soil on which Dan Madura got his start in farming from his parents, who were started by their parents, and so on, for over five generations.

Today, there are hundreds of farms in the area, both large and small.  Dan Madura Farm is one of the smaller ones, now just under 30 acres.  It’s a year-round family run farm with as many as ten family members working in the summer and using high tunnels to grow through the winter months on a smaller scale. Madura grows all types of vegetables, some fruit, like berries or currants, a few types of hops, herbs and mushrooms.  When asked what makes his farm stand out amongst competitors, Madura humbly replies, “Nothing….we are all a simple people trying to feed people the best way we can”.  But, what about those mushrooms? It’s an extensive and exotic mushroom selection that indeed makes Dan’s farm stand out among competitors.

In a mix of spent grain, wheat straw, and sawdust, Madura grows cancer-fighting Reishi, Maitake, Enokitake, Lion’s Mane, Shiitake, King Oyster, and Pioppini mushrooms. Reishi mushrooms, which are reminiscent of deep sea creatures, are so revered in Japan, it is believed that simply gazing upon them brings one good fortune. Madura grows these mysterious and culinary exotics year-round and is working on becoming the first American to cultivate the Bluefoot mushroom, which grows wild in California and is only cultivated in France.  Dan was fatefully introduced to mycology in 1977, when surpluses of cheap vegetables from California caused him to question his viability. Armed with a biology degree and a stack of books, Madura steeped himself in all things fungal, including Eastern medicine.  Eventually, he would extend this interest into the care for all of his crops.

Madura Farm fertilizes using myco-remediation and permaculture techniques with liquid teas.  They also use companion farming, row covers, mulch, cultivators, and tilivators to combat insects and weeds. No chemicals here.  They also stay away from GMO seeds unless they are natural mutations from Mother Nature. A lot of seeds they use are heirloom, many of which are their own and natural to this region.  They were developed on the farm, by the family through hard work, perseverance and the bond that keeps them there growing the food that you find at “The SOUK” every Sunday.

When you come to the market, look for, Dan’s son-in-law, Rashaun, a market favorite, with his friendly smile. “Rashaun is like the rest of us except he is a bit taller and his hair is a bit longer but he carries the same pride and conviction that we all have he truly represents who we really are as a people in this region that’s why I chose him!”

Joe Tomato Mozzarella – Joe “Tomato” learned to make authentic mozzarella on Arthur Avenue in The Bronx.  When he arrives at a market, his mozzarella is still warm. Creamy and only lightly salted, his mozzarella is the best around. He has been known to make up to 1000 mozzarella balls in one day, using special wooden mozzarella paddles he designed himself.

Vendor Spotlight:  The GUAC Spot

Chocolate and avocado in the same mouthful sounds unconventional at best, but, it is actually a food marriage made in heaven and it’s a very happy marriage indeed. Meet the AVOCADO-OBSESSED, husband and wife team John and Syl Gonzalez of The Guac Spot makers of avocado inspired food including the avocado brownie.  They know there are few things better in life than a perfectly ripe avocado. The avocado Mother Nature’s butter, rich and indulgent not only makes brownies the most chocolatey of chocolate but it’s healthy.

The Guac Spot is all about creative, avocado-inspired dishes made using fresh ingredients that you can feel good about eating.  Since 2015, John and Syl have worked together thoughtfully crafting food that feels indulgent, like you’ve dove into a diet breaker, and they make nearly everything from scratch. Initially, like most families, they were a mix of picky eaters looking to find “something for everyone”.  Their signature GUAC began as the only way they would eat fruit or vegetables! They soon got pretty creative about it and eventually expanded into using avocado in and on everything. It started on tacos and ended up in cookies and ice cream and The Guac Spot was born :)


Last year, they purchased their very own food truck and are expected to be hitting the roads for the spring festival season.  They also hope, one day, to have a brick and mortar home base to park the truck and give customers a consistent place to find them.   In their spare time you can usually find them with a glass of wine at their fire pit in the backyard, tracking down the next foodie event to check out. “Eat, drink, and be married”…that’s us in a nutshell :)”

Greetings and Happy New Year! We would like to let you know that “The SOUK” Indoor Farm Market is returning to The OUTSIDE IN Piermont, NY for a fourth season every Sunday from January 8th-April 9th; 11am to 3pm with an exciting new line-up of vendors, a pop-up coffee bar and a new seating room we are calling “The Kasbah” lounge. So, please join us and support our farmers and vendors while having a little fun!

New Vendor Lineup:

This year we introduce new farms, chefs and artisan food entrepreneurs to “The SOUK”, many of whom have never been to Rockland before. We’ve worked very hard on this vendor line-up and are really excited.  Many of your favorite vendors are back, but more than half are new this season. Like Itsa Pizza Truck (handmade signature sourdough crust pizza with market day toppings), Wave Hill Breads (artisan crafted from organic whole grains milled at their micro-bakery), FarmEats  (pasture-raised chicken/pork & grass-fed beef), Deep Roots Farm (all natural farm made pickles, micro-greens & sauces) and Mindful Kitchens (vegan charcuterie, burgers & pâté). There is also a full weekly menu of organic, gluten-free savory & sweet foods, prepared Greek, Italian and Middle-Eastern cuisines, from-scratch Asian dumplings, Japanese inspired locally made dressings, artfully-crafted avocado inspired eats, Northern Italian influenced jams, a wide variety of fresh baked desserts, confections and much more.  (Check out the full vendor line-up here.)

“The SOUK” is part of The Valley Area Network, a new non-profit organization dedicated to advancing and promoting the appreciation and awareness of the local culinary & fine arts and in particular, the work of Hudson Valley farmers, chefs and craft food artisans specializing in local and wholesome food.  “The SOUK” depends on donations to operate with the goals of providing critical revenue for our farm families, to grow our local economy & build relationships that sustain our community.

Nahmias et Fils, the Water of Life:

Mahia: This national spirit of Morocco is handcrafted in the Hudson Valley. Nahmias et Fils is the only source for locally-produced award-winning Mahia in the U.S. inspired by a 1900 heirloom Nahmias family recipe from the village of Taznakht, Nahmias Mahia. Regularly toasted in Casablanca as the most exceptional in all of Morocco. Mahia is to Morocco as Tequila is to Mexico.

Legs Diamond  Whiskey: 100% organic rye sustainably grown from local farms. Named after celebrity Prohibition bootlegger and gangster Legs Diamond  who enjoyed life and spirits, good whiskey and rye.  His nickname “Legs” was inspired by his dancing talent and ability to elude enemies. While the turbulent times of Legs Diamond’s life in the 20’s and 30’s wasn’t peaceful, the spirits did bring calm to many.

An esteemed panel of judges has been selected for the chili cook-off at the season’s finale of “The SOUK” (Sunday 3/29, 10am – 3pm).

 

Mimi Platas (owner/chef/caterer of Mimi’s Plate, Tappan), Matt Hudson (owner/pastry chef of The Hudson House, Nyack), and the inimitable and honorable Mayor of Piermont, Chris Sanders.

Dan Madura Farms

Dan Madura Farms is a family farm located in the heart of the black dirt region of Orange County, NY that grows a wide variety of fresh produce and gourmet specialties you may not ordinarily find at traditional farm markets.
Five types of garlic, fresh garlic stalks, micro­green mixes, red bordeaux spinach, Japanese greens, sprouts, regular/heirloom tomatoes, purple passion /green asparagus, four popcorns, sweet corns, rhubarb & ginger.
Dan Madura Jr.’s greatest achievements and a proven success for communities hosting markets is winter farming.  Weather having little consequence on his growing season, he can provide many items earlier & later to markets for consumers. Particularly head lettuce, loose greens, micro­greens, sprouts, leeks, fennel, tomatoes, peppers, zucchini, cucumbers, and root vegetables. 

Dan is currently the only cultivator of gourmet mushrooms in Orange County and has increased production to at least ten different varieties. He started growing mushrooms in 1977 and was named the first mushroom grower in Orange County as featured in the Times Herald Record. It is not only the great taste of the different mushrooms that concerns him, but their medicinal value as well. 

Madura Farms also houses nineteen bee hives for the production of honey and pollen, 200 free range chickens for extraordinary eggs blue, brown and dark brown eggs, and has an expanded crop of berries and other tree fruit.

Though not a certified organic farm, Dan is serious about practicing organic farming principles and is always considering new products and methods for the communities he serves.

Chefs Tim & Hala bring to you the flavors of Egypt with handmade recipes that have been handed down through their family.  Egyptian cuisine uniquely blends Middle Eastern, European, Mediterranean, and African flavors into signature dishes & sauces.  Exemplified in the garlicky, tangy red sauce of Kushari & exhaluted in Ful pronounced “fool’, a long simmered fava bean dish with spices, tomatoes, and onions, two culinary items unique to Egypt. “We’re in the heart of the American apple industry so it’s natural for us to turn to apples to create an original New York gin”.  The distinctive subtleties of the apple blend in the base spirit create a smoother and rounder gin.
White 58 & Green 72 Absinthe
White, redolent with fennel and licorice notes, is lower in alcohol than some other absinthes; Green is layered and complex, with anise and fennel notes interplaying with lemon balm and wormwood.
Basement Bitters
This elixir is a special blend of unaged rye spirit, Sarsaparilla, and fourteen other herbs and spices, balanced with local maple syrup and aged in one of our rye whiskey cured barrels.

A few updates to let you know about for tomorrow’s “SOUK” kickoff:

  • Chef Brian from Rockland Roots will be joining us with cauldrons of simmering soups.
  • Chef Kevin from Roost Restaurant will be making his award winning brisket chili.
  • Bombay Emerald Chutney Company will not be able to make it tomorrow. They will be coming later in the month.

With continued cold temperatures expected tomorrow, our wood stove will be cranking.   We have seating near the stove which is a great area to hang out, eat, drink and enjoy.  Look forward to seeing y’all.
